I love this for breakfast as it’s a great protein boost post workout! I also use it as a side dish alongside variations of roasted vegetables, it would also work nicely alongside some tender lamb, or some white fish.

Serves 2
Ingredients:
250g smoked firm tofu – drained and crumbled
6 sun dried tomatoes – chopped
3 tbsp. coconut aminos
200g spinach
Method:
- Heat up a pan.
- Put the tofu in the pan, move until it starts to warm through.
- Add the sun dried tomatoes and aminos. Season. Cook for a few minutes.
- Add spinach. Cook until it wilts.
