Sun dried tomato, Spinach & Tofu Scramble

I love this for breakfast as it’s a great protein boost post workout! I also use it as a side dish alongside variations of roasted vegetables, it would also work nicely alongside some tender lamb, or some white fish.

Serves 2

Ingredients:

250g smoked firm tofu – drained and crumbled

6 sun dried tomatoes – chopped

3 tbsp. coconut aminos

200g spinach

Method:

  1. Heat up a pan.
  2. Put the tofu in the pan, move until it starts to warm through.
  3. Add the sun dried tomatoes and aminos.  Season.  Cook for a few minutes.
  4. Add spinach. Cook until it wilts.
