Salmon with Sweet Potatoes and Avocado Salsa

So this one is something I did just before Christmas for dad and he wanted it for dinner too which means it must be good!

Serves 2

Ingredients:

2 x 100g salmon fillets

600g sweet potatoes – peeled and cut into 3cm slices

Smoked Paprika – 1 tblsp

1 tbsps. olive oil

1 avocado – rough chopped

150g cherry tomatoes - quartered

1 lime - juice

1 handful fresh coriander leaves – chopped

4 spring onions – chopped

200C

Method:

  1. Coat the potatoes in the oil and paprika.  Season.  Lay out flat on baking trays.  Bake for 45 minutes until golden brown – turn once.
  2. Put a pan on the heat to hot. Season the salmon, put skin side in the pan.
    Cook until the skin is brown (about 3minutes), turn the salmon over.
    Turn over to brown all 4 sides.
  3. Mix together the avocado, tomatoes, lime juice, coriander, and spring onions. Season.
