Cajun Chicken & Avocado Breakfast

Spice up your breakfast with this nutritious and easy to make recipe!

Serves 2

Ingredients:

1 chicken breast – sliced once cross ways into thin slices.

1tsp Cajun spice

1tsp olive oil

2 large tomatoes – cut in half

1 avocado – peeled, cut in half

2tblsp balsamic

100g (3.5oz) spinach

Method:

  1. Heat a pan to medium heat. Rub the chicken with Cajun spice and oil. Season. Put the chicken in the pan. Cook for 1 minute.
  2. Add the tomatoes and avocado. Season. Cook on one side for a 5 minutes.
  3. Turn over the chicken, tomatoes, and avocado.  Cook for 3 more minutes.
  4. Add the balsamic. . Check the chicken is cooked through (not pink in the middle).

Notes:

I normally veganise this using 200g firm smoked tofu, cut into 1cm slices, and then cooked exactly the same as the chicken is.
