Avocado & Parsley Hummus

Here it is - the creamiest hummus ever!

Try it with vegetable crutidess and warm pitta bread.

Ingredients:

1 x 400g tin chickpeas drained and rinsed

2 x avocados – peeled and stone remove

2tblps tahini

2 limes – juiced

3 cloves garlic – peeled

1tbsp coconut aminos (substitute for soy sauce)

180ml water

1 x large handful fresh parsley – leaves not stalks – rough chopped

Method:

  1. Put all the ingredients in a food processor and season.
  2. Blitz until smooth. You may have to scrape down the side a few times.
