Banana pecan muffins

Who doesn’t like a treat every so often?! Make sure that your bananas are really ripe - the blacker the skin the better or the muffins won't taste as good!

These always go down a treat and never really last very long – one of my mum's favorites! Feel free to add sultanas and/or swap the pecans for walnuts.‍

Serves 12

Ingredients

2 tblsp ground flax seed

6 tblsp water

320g ripe bananas

60g coconut oil – melted

60g maple syrup

100g pecans

300g ground almonds

50g oats

2tsp baking powder

3 tsp ground cinnamon

Method
  1. Pre-heat your oven to 180degrees C
  2. Mix together the flax seed and water. Set aside.
  3. Put the bananas, coconut oil, maple syrup, and flax seed mix in food processor until smooth.
  4. Add the pecans. Pulse until roughly chopped.
  5. Add the almonds, oats baking powder and cinnamon. Blitz until just combined.
  6. Put into 12 lined muffin cases. Bake for 25 minutes.
