Who doesn’t like a treat every so often?! Make sure that your bananas are really ripe - the blacker the skin the better or the muffins won't taste as good!
These always go down a treat and never really last very long – one of my mum's favorites! Feel free to add sultanas and/or swap the pecans for walnuts.

Serves 12
Ingredients
2 tblsp ground flax seed
6 tblsp water
320g ripe bananas
60g coconut oil – melted
60g maple syrup
100g pecans
300g ground almonds
50g oats
2tsp baking powder
3 tsp ground cinnamon
Method
- Pre-heat your oven to 180degrees C
- Mix together the flax seed and water. Set aside.
- Put the bananas, coconut oil, maple syrup, and flax seed mix in food processor until smooth.
- Add the pecans. Pulse until roughly chopped.
- Add the almonds, oats baking powder and cinnamon. Blitz until just combined.
- Put into 12 lined muffin cases. Bake for 25 minutes.
